1 cup of Old Fashioned Oats

1.5 tablespoons Vanilla Protein Powder

1/4 cup pumpkin puree

1/4 teaspoon pumpkin seasoning

1 pinch of cinnamon

1 dash maple syrup, honey or Splenda brown sugar (sweeten to taste, it does not need much!)

1/4 large seasonal apple

1 small handful of baked pecans (if you have petite hands, then go for the full hand :)

 

In a microwave safe bowl, mix all the ingredients except for the apple and pecans.  Cover this mix with water until it is barely submerged.  Cook until you get your desired texture, just be careful not to let the oatmeal boil over the edge.  It usually takes around 2 minutes.  If you don’t like it thick, add a little hot water from the tap after cooking. Once you have your desired consistency, top off your oatmeal with diced apple pieces and your toasted pecans.

If you have never baked pecans, this is our method (SO AMAZINGLY DELICIOUS):

  • preheat oven to 400
  • spray cookie sheet lightly
  • mix a large bowl of pecan pieces, 1 egg white and a little bit of your choice sweetener (maple syrup, honey or brown sugar)
  • spread mix on the cookie sheet in one even layer
  • bake until one side browns and then flip to brown the other side
  • approximately 10 minutes total to bake, they will turn crispy after they cool down

Break these pecans apart from each other and store in a container to use in this delicious oatmeal dish or on your evening salad!
